Sun-Dried Tomato Appetizers

|1||French baguette, cut into 20 slices|
|¼ c.||Hy-Vee butter, melted|
|¼ c.||Hy-Vee butter, softened|
|4 oz.||crumbled feta cheese|
|Hy-Vee salt and Hy-Vee pepper to taste|
|¼ c.||finely chopped sun-dried tomatoes|
|½ c.||Hy-Vee chopped walnuts|
|½ c.||Hy-Vee shredded mozzarella cheese|
|½ c.||fresh chopped parsley|
- Preheat oven to 400 degrees. Using the 1/4 cup of melted butter, brush one side of each slice of bread. Place bread butter-side-up on a baking sheet. Bake 7 minutes or until lightly toasted.
- In a small bowl, stir together the softened butter, feta cheese, salt, pepper and tomatoes. Spread the mixture over the tops of the toasted bread slices. Evenly sprinkle walnuts and mozzarella cheese over bread.
- Bake for 6 minutes or until topping is melted and bubbly. Arrange on a serving tray and garnish with chopped parsley.
