½ small white onion, diced
½ red bell pepper, diced
½ yellow bell pepper, diced
½ jalapeño, minced
¼ c. chopped cilantro leaves
2 tbsp. lime juice
¼ tsp. salt
¼ tsp. pepper
Lime wedge, for garnish

Directions

  1. Combine tomatoes, onion, bell peppers, and jalapeño in a bowl. Mix in cilantro.
  2. Serve salsa with your favorite corn chips and a lime wedge, if desired.
  3. Stir in lime juice, salt and pepper until evenly incorporated, adding more to taste if desired.
  4. Salsa can be made up to 24 hours ahead and refrigerated until ready to eat.
