    ¾ c. water
    ¼ c. uncooked rice, not instant
    ½ c. raisins
    1 tsp. cinnamon
    2 c. skim milk
    1 packet(s) sugar-free regular vanilla pudding, prepared according to package directions
    1 (8 oz) container lite or fat-free whipped topping, thawed
    2 c. fresh fruit


    1. Combine water and rice in a microwave-safe bowl. Cover dish and microwave for 8 minutes, stirring once.
    2. Add raisins, cinnamon, skim milk and prepared vanilla pudding. Return to the microwave and cook until thickened. Cool.
    3. Add whipped topping and fresh fruit.
    4. Refrigerate until serving time.
