Summertime Rice Pudding

|¼ c.||uncooked rice, not instant|
|2 c.||skim milk|
|1 packet(s)||sugar-free regular vanilla pudding, prepared according to package directions|
|1||(8 oz) container lite or fat-free whipped topping, thawed|
|2 c.||fresh fruit|
- Combine water and rice in a microwave-safe bowl. Cover dish and microwave for 8 minutes, stirring once.
- Add raisins, cinnamon, skim milk and prepared vanilla pudding. Return to the microwave and cook until thickened. Cool.
- Add whipped topping and fresh fruit.
- Refrigerate until serving time.
