    1 (8.5 oz) pouch Uncle Ben's brown & wild rice ready whole grain medley
    2 c. shredded rotisserie chicken
    ½ c. chopped red bell pepper
    1 c. Hy-Vee frozen peas, prepared according to package directions
    ¼ c. Hy-Vee light Italian dressing
    1 tbsp. Hy-Vee Dijon mustard

    Directions

    1. Prepare rice according to package directions. Pour into a large bowl. Cool slightly.
    2. Stir in chicken, red bell pepper and peas.
    3. In a small bowl, whisk together Italian dressing and mustard. Pour over chicken and rice mixture.
    4. Cover and chill.
