¼ c. olive oil
3 tbsp. Hy-Vee lemon juice
½ tsp. garlic, finely chopped
1 tsp. Hy-Vee kosher salt
¼ tsp. Hy-Vee ground black pepper
Couscous Salad
1 ¼ c. water
8 oz. Hy-Vee couscous
½ c. red bell pepper, diced
½ c. cucumber, diced
½ c. radish, thinly sliced
¼ c. pistachios, roughly chopped

Directions

  1. Bring water to a boil in a large saucepan.                        

  2. Add couscous, cover, remove from heat, and let rest for 5 minutes. Transfer cooked couscous to a serving bowl and fluff with a fork. Let cool completely. 

  3. To make dressing, whisk together the olive oil, lemon juice, garlic, salt, and pepper. Set aside. 

  4. Stir the red bell peppers, cucumbers, radishes, pistachios, and fresh basil into cooled couscous. 

  5. Add dressing and mix well.
