Directions
Add couscous, cover, remove from heat, and let rest for 5 minutes. Transfer cooked couscous to a serving bowl and fluff with a fork. Let cool completely.
To make dressing, whisk together the olive oil, lemon juice, garlic, salt, and pepper. Set aside.
Stir the red bell peppers, cucumbers, radishes, pistachios, and fresh basil into cooled couscous.
Add dressing and mix well.
