4sweet potatoes
1 tbsp.Hy-Vee granulated sugar
1 tsp.Hy-Vee cinnamon
½ tsp.Hy-Vee nutmeg
Hy-Vee miniature marshmallows
Hy-Vee Select 100% pure maple syrup

Directions

  1. Preheat oven to 400 degrees. Wash sweet potatoes, pat dry and place on a baking sheet. Bake for 45 minutes or until tender.
  2. Remove sweet potatoes and cut them in half lengthwise. Scoop the insides into a bowl, keeping the skins intact.
  3. Mix potato insides with sugar, cinnamon and nutmeg. Scoop the insides back into 6 potato skin halves, discarding 2 remaining skin halves. Top with miniature marshmallows to cover.
  4. Place filled sweet potato halves back on the baking pan and broil for approximately 3 to 5 minutes, watching carefully for marshmallows to brown. Drizzle with syrup before serving.
