Stuffed Sweet Potatoes
Chef's Tip: Soften 2 tablespoons butter and 1 tablespoon cream cheese and stir into the filling.
Servings and Ingredients
|1 tbsp.||Hy-Vee granulated sugar|
|1 tsp.||Hy-Vee cinnamon|
|½ tsp.||Hy-Vee nutmeg|
|Hy-Vee miniature marshmallows|
|Hy-Vee Select 100% pure maple syrup|
- Preheat oven to 400 degrees. Wash sweet potatoes, pat dry and place on a baking sheet. Bake for 45 minutes or until tender.
- Remove sweet potatoes and cut them in half lengthwise. Scoop the insides into a bowl, keeping the skins intact.
- Mix potato insides with sugar, cinnamon and nutmeg. Scoop the insides back into 6 potato skin halves, discarding 2 remaining skin halves. Top with miniature marshmallows to cover.
- Place filled sweet potato halves back on the baking pan and broil for approximately 3 to 5 minutes, watching carefully for marshmallows to brown. Drizzle with syrup before serving.
