Description

This salad has it all: blue cheese, strawberries, hard boiled eggs, and a fresh and zippy Lime Vinaigrette. Make it a meal when you pick up O That's Good! pizza made with a lower-carb cauliflower pizza crust.

2 c.fresh spinach leaves
2 c.fresh baby arugula leaves
8fresh strawberries, sliced
1avocado, peeled, seeded, and sliced
½medium red onion, sliced
4Hy-Vee large eggs, hard boiled and sliced
2 tbsp.Hy-Vee Select blue cheese crumbles
2 tbsp.Hy-Vee walnuts
Fennel fronds, for garnish

Directions

  1. For Lime Vinaigrette: Whisk together lime juice, shallots, honey, salt, and pepper. Slowly whisk in oil.

  2. Arrange spinach and arugula in four salad bowls.

  3. Top with sliced strawberries, avocado, red onion, egg slices, blue cheese, and walnuts. Garnish with fennel fronds, if desired. Serve with Lime Vinaigrette.
