Stadium Stuffed Baby Bella Mushrooms

1 c. Hy-Vee sour cream | ||
1 (8 oz) package Hy-Vee cream cheese, softened | ||
⅔ c. diced roasted red pepper | ||
½ c. minced green onion | ||
1 tsp. fresh dill | ||
1 tsp. Hy-Vee salt | ||
1 tsp. Hy-Vee black pepper | ||
1 tsp. cumin | ||
4 (8 oz each) packages baby bella mushrooms, or about 40 mushrooms |
Directions
- In a medium bowl combine sour cream and cream cheese; stir in roasted red pepper, green onions and spices.
- Remove stem from mushrooms and clean. Stuff each mushroom with about 1 tablespoon sour cream mixture and serve.
