Spring Salad with Lemon Vinaigrette

|1 (12 oz) pkg Hy-Vee Veggie Deluxe salad blend|
|1 cucumber, seeded and sliced|
|2 c. shredded cooked chicken breast|
|1 lemon, zested and juiced|
|¼ c. extra-virgin olive oil|
|1 tbsp. chopped fresh basil|
|1 garlic clove, minced|
|½ tsp. Hy-Vee granulated sugar|
|Hy-Vee salt and Hy-Vee pepper, to taste|
Things To Grab
- In a large bowl, toss together salad blend, cucumber and chicken.
- In a small bowl, whisk together lemon zest and juice, oil, basil, garlic, sugar, salt and pepper. Pour over salad and toss well.
