20 oz. frozen chopped spinach
4 large eggs, beaten
2 c. packaged herb stuffing
½ c. Parmesan cheese
1 clove(s) garlic, minced
1 medium onion, chopped finely
1 ½ tsp. thyme
¾ c. butter, melted
salt and pepper, to taste

Directions

  1. Cook spinach until nearly done. Drain and squeeze dry. Mix with remaining ingredients.
  2. Chill for 2 hours. Roll into 1-inch balls. Freeze on cookie sheet.
  3. When frozen, store in plastic bags in freezer until needed. Thaw slightly before baking. Bake at 300 degrees for 30 minutes.
