    1 tbsp. Gustare Vita olive oil
    1 large yellow onion, chopped
    1 tsp. dried thyme
    3 (15-oz. each) cans Hy-Vee black beans , rinsed and drained
    1 (32-oz.) container Hy-Vee 33%-less-sodium chicken broth
    1 (28-oz.) can Hy-Vee mild diced tomatoes and green chilies, undrained
    2 tsp. ground cumin
    Hy-Vee light sour cream and chopped fresh cilantro, for serving

    Directions

    1. Heat olive oil in large saucepan over medium heat. Add onion and thyme. Sauté until onions are soft, about 10 minutes. Stir in beans, broth, tomatoes and cumin; bring to a boil over high heat. Reduce heat to medium and simmer 20 minutes, stirring occasionally. Remove from heat and cool slightly.

    2. Working in 3 batches, carefully puree soup in blender. Return to saucepan and heat through. Serve with sour cream and chopped cilantro, if desired.
