Spiced Sweet Potatoes

    3 lbs. sweet potatoes, peeled and cut into 1-inch pieces
    ½ c. brown sugar
    1 tsp. pumpkin pie spice
    2 tbsp. orange juice
    1 tsp. vanilla extract
    2 tbsp. butter


    1. Preheat oven to 350 degrees.
    2. Combine sweet potatoes, brown sugar and pumpkin pie spice in a large bowl. Mix well. Spread into a 9-by-13-inch baking dish.
    3. Combine orange juice and vanilla extract. Pour evenly over sweet potatoes. Dot potatoes with butter. Cover pan.
    4. Bake at 350 degrees for 40 minutes.
    5. Remove pan from oven, uncover and stir.
    6. Return pan to oven and bake, uncovered, for an additional 15 to 20 minutes, or until potatoes are fork-tender.
    7. TIP: Prepare potatoes up to 2 to 3 hours ahead of time. Cover and refrigerate. Reheat before serving.
