    1 c. brown sugar
    ¼ c. soy oil
    1 (2.5 oz) jar prune baby food or 1/4 c. pureed prunes
    2 egg whites
    ½ c. applesauce or mashed cooked pumpkin
    1 tsp. vanilla
    1 c. cooked soybeans, rinsed, drained and mashed
    2 c. flour (may use all or part whole wheat)
    2 tsp. baking powder
    1 tsp. cinnamon
    ½ tsp. nutmeg
    ¼ tsp. cloves
    ¼ tsp. ginger
    1 c. oats
    1 c. raisins

    Directions

    1. Combine brown sugar, oil, prunes, egg whites, applesauce and vanilla in a large mixing bowl. Beat together well with electric mixer. Beat in mashed soybeans.
    2. Preheat oven to 375 degrees.
    3. In medium mixing bowl, sift together flour, baking powder, cinnamon, nutmeg, cloves and ginger. Stir into soybean mixture.
    4. Stir oats and raisins into dough.
    5. Drop dough by rounded teaspoonfuls onto a nonstick or lightly greased baking sheet. Bake at 375 degrees for 10 minutes, until firm and lightly golden.
    6. To make Pumpkin Spice Cookies, substitute mashed cooked pumpkin for the 1/2 cup applesauce.
