2 tbsp. Spectrum organic extra virgin olive oil
½ c. chopped onion
½ c. finely chopped celery
½ c. finely chopped carrots
2 clove(s) garlic, finely chopped
1 tsp. Simply Organic basil
crushed red pepper, optional
1 (28 oz) can Full Circle organic crushed tomatoes with basil
Hot, cooked organic pasta, optional

Directions

  1. Heat oil in a large saucepan over medium heat. Add onion, celery, carrots and garlic. Reduce heat to medium-low and sauté until vegetables are soft and beginning to brown, about 15 minutes.
  2. Add basil, crushed red pepper and tomatoes. Simmer, uncovered, until thickened, about 20 minutes. If desired, puree the sauce in batches in a food processor or blender.
  3. If desired, serve over hot, cooked pasta.
