½ c. chopped onion | ||
½ c. finely chopped celery | ||
½ c. finely chopped carrots | ||
2 clove(s) garlic, finely chopped | ||

crushed red pepper, optional | ||
1 (28 oz) can Full Circle organic crushed tomatoes with basil | ||
Hot, cooked organic pasta, optional |
Directions
- Heat oil in a large saucepan over medium heat. Add onion, celery, carrots and garlic. Reduce heat to medium-low and sauté until vegetables are soft and beginning to brown, about 15 minutes.
- Add basil, crushed red pepper and tomatoes. Simmer, uncovered, until thickened, about 20 minutes. If desired, puree the sauce in batches in a food processor or blender.
- If desired, serve over hot, cooked pasta.
