2 c. Hy-Vee 33%-less-sodium chicken broth or vegetable stock
(8-oz.) Hy-Vee white quinoa
1 tbsp. olive oil
¼ c. onion, chopped
½ c. Hy-Vee frozen corn, thawed
½ c. Hy-Vee black beans, drained and rinsed
⅓ c. red bell pepper, chopped
¼ fresh cilantro, chopped

Directions

  1. Bring stock to a boil. Add quinoa and simmer, covered, for 12 minutes. Set aside and keep warm. 

  2. Meanwhile, heat olive in a medium skillet. Sauté onions until lightly browned.

  3. Stir in corn, black beans, and red bell peppers. Heat through. 

  4. Add quinoa and fresh cilantro; mix well.
