Southwest Fiesta Salad
Servings and Ingredients
|1 (9 oz) pkg Louis Rich Southwestern chicken breast strips|
|1 (15 oz) can Hy-Vee kidney beans, drained and rinsed|
|1 (3.8 oz) can Hy-Vee sliced ripe olives, drained|
|¼ c. sliced green onion|
|½ c. Chi Chi's mild salsa|
|½ c. fat free French dressing|
|1 (5 oz) Dole classic salad mix|
|1 c. Kraft 2% milk cheddar and Monterey cheese cubes|
- In a medium mixing bowl, combine chicken strips, beans, olives, green onion, salsa and dressing. Mix well.
- Place salad mix and cheese cubes in a large serving bowl.
- Stir in chicken mixture. Toss gently to coat.
- Serve immediately or refrigerate covered, up to 4 hours.
