    1 ½ c. Hy-Vee butter flavor vegetable shortening
    2 c. plus 1/2 c. Hy-Vee granulated sugar, divided
    2 Hy-Vee large eggs
    2 tbsp. Hy-Vee vanilla
    ½ c. mild molasses
    4 c. Hy-Vee flour
    4 tsp. Hy-Vee baking soda
    1 tsp. Hy-Vee salt
    1 tsp. Hy-Vee nutmeg
    1 tsp. Hy-Vee ginger
    1 (8 oz) bag English toffee bits

    Directions

    1. Preheat oven to 350 degrees.
    2. Cream shortening and 2 cups granulated sugar. Add eggs, vanilla and molasses; mix well.
    3. Sift together flour, baking soda, salt, nutmeg and ginger. Gradually add to butter mixture and beat until combined.
    4. Stir in toffee bits.
    5. Shape dough into 1-1/2-inch balls and roll in remaining 1/2 cup sugar.
    6. Place cookies 2-inches apart on ungreased baking sheet. Flatten slightly. Bake 8 to 10 minutes or until golden. Remove cookies from baking sheet to cool completely on wire rack.
