    1 (2 to 3 pound) rack pork loin back ribs
    JB Fat Boy all-purpose rub, as needed
    2 tbsp. liquid smoke
    ½ c. water
    Hy-Vee Hickory House barbecue sauce, as needed

    Directions

    1. Remove silver skin from back of ribs. Cut ribs in half. Season with rub mixture on both sides. Place in a 9-by-13-inch baking pan, bone side down. Pour liquid smoke and water around ribs. Cover tightly with plastic wrap and foil. Refrigerate overnight.
    2. Preheat oven 350 degrees. Remove plastic wrap; discard. Cover tightly with foil and bake for 2 1/2 to 3 hours, or until meat is tender and falls away from the bone.
    3. Prepare a charcoal or gas grill for direct cooking over medium heat. Place ribs, bone side down, on grill. Grill 4 minutes. Flip ribs over and coat with barbecue sauce and continue to grill 4 minutes. Flip again, coat with barbecue sauce and continue to grill 2 to 3 minutes.
