    ½ c. Hy-Vee baking mix
    ½ c. Hy-Vee 2% milk
    ¼ c. Hy-Vee sour cream
    1 tbsp. Hy-Vee Dijon mustard
    2 Hy-Vee large eggs
    ⅔ c. Hy-Vee shredded cheddar cheese
    ½ c. chopped smoked salmon
    1 tbsp. chopped green onion
    1 tsp. Hy-Vee dried dill weed

    Directions

    1. Preheat oven to 400 degrees. Spray 24 mini muffin cups with cooking spray.
    2. In a large bowl, beat together baking mix, milk, sour cream, Dijon mustard and eggs. Stir in cheese, salmon, green onion and dill weed. Spoon about 1 tablespoon into each muffin cup.
    3. Bake 15 to 18 minutes or until golden. Cool 5 minutes before removing from pan. Serve warm.
