24 fresh mushrooms (about 2 inches in diameter), stems removed
¾ c. bottled pesto
¼ c. pine nuts, optional
4 oz. smoked Gouda cheese, cut into 24 slices

Directions

  1. Preheat oven to 350 degrees.
  2. Arrange mushroom caps in a 15-by-10-inch baking pan. Spoon 3 teaspoons pesto into each mushroom cap. Press 1/2 teaspoon pine nuts into pesto.
  3. Bake 10 minutes. Arrange cheese slices on mushroom caps and bake 5 minutes more or until cheese melts.
