Smoked Gouda-Pesto Mushrooms

24 | fresh mushrooms (about 2 inches in diameter), stems removed | |
¾ c. | bottled pesto | |
¼ c. | pine nuts, optional | |
4 oz. | smoked Gouda cheese, cut into 24 slices |
Directions
- Preheat oven to 350 degrees.
- Arrange mushroom caps in a 15-by-10-inch baking pan. Spoon 3 teaspoons pesto into each mushroom cap. Press 1/2 teaspoon pine nuts into pesto.
- Bake 10 minutes. Arrange cheese slices on mushroom caps and bake 5 minutes more or until cheese melts.
