    1 (9 oz) Hy-Vee frozen pie crust, baked according to package directions and cooled completely
    1 lbs. sweet potatoes
    ¾ c. Hy-Vee granulated sugar
    ½ c. whipping cream
    2 Hy-Vee large eggs
    1 tsp. Hy-Vee vanilla extract
    1 tsp. pumpkin pie spice
    1 c. Hy-Vee miniature marshmallows
    ½ c. Hy-Vee pecan pieces

    Directions

    1. Preheat oven to 375 degrees.
    2. Roast sweet potato on a baking sheet, about 45 minutes. Cool completely.
    3. Reduce oven temperature to 325 degrees.
    4. Scoop 1 cup of sweet potato pulp into blender. Add sugar, whipping cream, eggs, vanilla and pumpkin pie spice. Blend until smooth.
    5. Place marshmallows and pecan pieces on crust. Pour sweet potato mixture over top.
    6. Bake for 35 minutes until filling is set.
    7. Cool completely on cooling rack.
