Shrimp-Stuffed Mushrooms

1 (8 oz) pkg whole mushrooms | ||
2 tbsp. Hy-Vee Select garlic-flavored olive oil, divided | ||
1 (4.4 oz) container light Boursin cheese | ||
¼ lbs. cooked shrimp, peeled, finely chopped | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Preheat oven to 350 degrees. Remove stems from mushrooms; finely chop stems. Rub 1 1/2 tablespoon oil into top-side of mushroom caps. Place mushrooms top-side-down in a baking dish.
- Saute stems in remaining 1/2 tablespoon oil until tender. Stir together stems, cheese, shrimp, salt and pepper.
- Fill mushrooms with cheese mixture. Bake uncovered for 15 minutes or until mushrooms are tender.
