Directions
Heat a skillet over medium heat and sear gnocchi 2 to 3 minutes on each side until crispy. Remove from pan; set aside.
Drizzle same skillet with olive oil. Cook spinach and tomatoes until spinach is cooked down. Add shrimp and cook until heated through (145 degrees).
Add gnocchi back to the skillet and fold in pesto.
