    ½ lbs.medium shrimp, cooked, with tails off
    1medium onion, finely chopped
    1small green bell pepper, seeded and finely chopped
    2(14.5 oz each) cans diced tomatoes, undrained
    1 tsp.Spice Islands thyme leaf
    1 tsp.Spice Islands tarragon
    ¼ tsp.Spice Islands cayenne pepper

    Directions

    1. Rinse shrimp in colander under cold water; let drain.
    2. Combine onion, green pepper and tomatoes in a large bowl. Add shrimp, thyme, tarragon and cayenne pepper. Cover and chill at least 10 minutes.
    3. Serve with warm foccacia or French bread.
