Description

Pancakes are easier to make when you make them on a sheet pan! Customize them with your favorite toppings and use protein-packed Kodiak Cake mix to give them a healthy twist.

2 c. Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
2 c. Silk Ultra unsweetened soy protein beverage
¼ c. Hy-Vee 100% pure maple syrup
2 Hy-Vee large eggs
2 tbsp. Hy-Vee unsalted butter, melted; or avocado oil
1 tsp. Hy-Vee vanilla extract
Desired toppings, such as: sliced bananas, sliced strawberries, blueberries, raspberries, blackberries, dark chocolate chips, chopped pecans, and/or peanut butter drizzle

  • Medium bowl

Directions

  1. Preheat oven to 400 degrees. Line a sheet pan with foil; lightly spray with nonstick spray. Set aside.

  2. Add pancake mix to a medium bowl; set aside. In another medium bowl, whisk together soy milk, maple syrup, eggs, butter or avocado oil, and vanilla. Add egg mixture to pancake mix. Stir gently to combine. Pour evenly into prepared baking pan.

  3. Sprinkle desired toppings on top of pancake mix. Bake 18 to 20 minutes or until a toothpick inserted near center comes out clean. Cool slightly and serve with additional maple syrup, if desired.
