In a medium bowl, whisk together eggs, milk, salt, and pepper. Pour mixture into prepared pan and sprinkle with shredded and your choice of toppings.
Bake for 20 minutes until eggs have set, cheese has melted, and vegetables have softened. Cut into 12 pieces.
