    1 c. plus 2 tbsp Hy-Vee all-purpose flour, divided
    ½ c. Hy-Vee powdered sugar
    Hy-Vee salt
    ½ c. Hy-Vee butter, softened
    1 c. Hy-Vee granulated sugar
    3 tbsp. lemon juice
    2 Hy-Vee large eggs, beaten
    Additional powdered sugar, optional

    Directions

    1. Preheat oven to 350 degrees.
    2. In a large bowl, combine 1 cup flour, powdered sugar, salt and butter. Press into the bottom of an ungreased 9-inch-square pan. Bake crust for 20 minutes.
    3. In a medium bowl, combine granulated sugar, remaining 2 tablespoons flour, lemon juice and eggs. Mix well. Pour over baked crust.
    4. Bake for an additional 20 to 25 minutes.
    5. Sprinkle with additional powdered sugar, if desired.
