Directions
Add onion to drippings in saucepan. Cook over medium heat 10 to 12 minutes or until softened, stirring frequently. Stir in cherries, sugar, vinegar, orange juice, salt, and pepper. Bring to a boil over medium-high heat. Boil 2 minutes, stirring constantly.
Reduce heat to medium-low. Simmer, uncovered 25 to 30 minutes or until mixture thickens and reaches 215 degrees, stirring occasionally. Jam will continue to thicken as it cools.
Stir in bacon and orange zest. Spoon into 3 (1/2-pint each) canning jars or heat-resistant containers. Cool completely. Cover and store in refrigerator up to 1 week.
