    1 lbs. 98% fat-free ground turkey
    1 (15 oz) can Hy-Vee kidney beans, rinsed and drained
    1 (14.5 oz) can Hy-Vee diced tomatoes with green chilies, undrained
    4 c. Hy-Vee chicken broth
    2 c. Hy-Vee frozen mixed vegetables
    1 small onion, chopped
    3 clove(s) garlic, minced
    1 tbsp. ground cumin
    ½ tsp. hot pepper sauce
    1 c. Hy-Vee shredded cheddar cheese, divided

    Directions

    1. In a large saucepan, over medium heat, cook turkey until no longer pink, about 5 minutes.
    2. Stir in kidney beans, tomatoes, chicken broth, vegetables, onion, garlic, cumin and hot pepper sauce.
    3. Bring to a boil. Cover and simmer 10 minutes.
    4. To serve, ladle soup into a bowl and top with cheese.
