    1 tsp.Hy-Vee Select olive oil
    ½ c.chopped onions
    1 tbsp.chopped garlic
    1(14.5 oz) can Hy-Vee petite diced tomatoes
    2 c.diced peeled potatoes
    ½ tsp.Hy-Vee dried oregano
    dash(es)cayenne pepper
    1 c.Hy-Vee reduced-sodium chicken broth
    ¾ lbs.cod, cut into 1-inch pieces

    Directions

    1. Heat olive oil in a large saucepan over medium heat. Add onions and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute.
    2. Stir in tomatoes, potatoes, oregano, cayenne pepper and chicken broth. Simmer, covered, for 15 minutes or until potatoes are tender.
    3. Stir in cod. Cover and simmer until cod begins to flake, about 5 minutes.
