Preheat oven to 300 degrees. Line a rimmed baking pan with parchment paper. Clean pulp from winter squash seeds in a large bowl of water. Rinse and drain seeds in a colander. Spread seeds on paper towels and pat dry.
Why throw out the squash seeds when you can clean them and roast them for a healthy snack!

|¾ tsp.||Gustare Vita olive oil|
|1 tsp.||salt-free Southwest-lime seasoning blend|
|¼ tsp.||fine sea salt|

Toss seeds with olive oil, salt-free seasoning, and sea salt. Spread on prepared pan.
Roast 15 minutes or until lightly golden and slightly crisp, stirring once. Cool completely before serving.
