Trim 4 medium leeks; cut lengthwise in half. Rinse well; pat dry with paper towels. Place on baking sheet cut-side down. Drizzle with 2 to 3 tablespoons of olive oil.
Roast for 25 to 30 minutes or until fork-tender. Place on serving platter cut sides up. Sprinkle with 1 tablespoon Parmesan and crushed red pepper. Season to taste with salt.
