Roasted Ginger Carrots
You know peas and carrots go together, but have you tried ginger and carrots? Using fresh-grated ginger gives 'em just enough spice to brighten the flavor.
Servings and Ingredients
|2 lbs. baby carrots|
|2 tsp. finely grated fresh ginger|
|2 tbsp. Hy-Vee Select olive oil|
|Hy-Vee kosher sea salt and Hy-Vee freshly ground black pepper, to taste|
- Toss together carrots, ginger and olive oil in a 9-by-13-inch baking pan. Season, to taste, with salt and pepper. Roast in 300-degree oven for 2 hours or until tender, stirring once.
