Description

Roasting vegetables on a rimmed baking sheet gives them more caramelization. But just about any baking dish should do.

3 carrots, peeled and sliced
½ large Vidalia onion, chopped
8 to 10 cloves garlic, smashed
¼ c. Hy-Vee Select olive oil
1 tsp. Hy-Vee rosemary
1 tsp. thyme
Hy-Vee salt and Hy-Vee pepper, to taste

Directions

  1. Combine vegetables, oil, rosemary, thyme, salt and pepper in 2-quart casserole dish. Bake at 425 degrees for 45 to 50 minutes, until vegetables are tender.
