Roasted Garlic Potatoes and Carrots

Description
Roasting vegetables on a rimmed baking sheet gives them more caramelization. But just about any baking dish should do.

½ large Vidalia onion, chopped | ||
8 to 10 cloves garlic, smashed | ||
¼ c. Hy-Vee Select olive oil | ||
1 tsp. Hy-Vee rosemary | ||
1 tsp. thyme | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Combine vegetables, oil, rosemary, thyme, salt and pepper in 2-quart casserole dish. Bake at 425 degrees for 45 to 50 minutes, until vegetables are tender.
