We love this roasted veggie recipe for its simple yet delicious flavor. Use orange and yellow carrots for a colorful side.

1 ½ lbs. orange and/or yellow carrots
3 tbsp. Gustare Vita olive oil

Things To Grab

  • Large rimmed baking pan
  • Foil
  • Hy-Vee nonstick cooking spray

Directions

  1. Preheat oven to 400 degrees. Line large rimmed baking pan with foil. Spray with nonstick spray; set aside. 

  2. Trim carrots; cut in half lengthwise. Place on prepared baking pan. Brush with olive oil.

  3. Roast for 25 to 30 minutes or until tender.
