6 medium red beets, and/or gold beets, trimmed
2 tbsp. Gustare Vita olive oil
¼ c. fresh arugula , for serving
Hy-Vee chopped pecans, toasted, for serving

Directions

  1. Preheat oven to 400 degrees. Line large rimmed baking pan with foil. Spray with nonstick spray; set aside. 

  2. Rub beets with olive oil. Place on prepared baking pan. Roast for 45 to 55 minutes or until tender. Cool for 15 minutes. 

  3. Peel beets and cut into 1/4-inch-thick slices. Arrange on serving platter with fresh arugula. Sprinkle with chopped pecans, if desired.
