Preheat oven to 400 degrees. Line large rimmed baking pan with foil. Spray with nonstick spray; set aside.

|6 medium red beets, and/or gold beets, trimmed|
|2 tbsp. Gustare Vita olive oil|
|¼ c. fresh arugula , for serving|
|Hy-Vee chopped pecans, toasted, for serving|

Rub beets with olive oil. Place on prepared baking pan. Roast for 45 to 55 minutes or until tender. Cool for 15 minutes.
Peel beets and cut into 1/4-inch-thick slices. Arrange on serving platter with fresh arugula. Sprinkle with chopped pecans, if desired.
