Servings and Ingredients
|2 Cornish hens, thawed, rinsed and patted dry|
|1 tsp. poultry seasoning, divided|
|1 small lemon, cut into 4 wedges|
- Preheat the oven to 400 degrees. Place a wire rack on a baking sheet; set aside.
- Season each hen with 1/2 teaspoon poultry seasoning. Place 2 lemon wedges inside each hen cavity. Place hens on prepared baking sheet.
- Roast for 30 minutes. Reduce heat to 350 degrees and continue to roast for 30 minutes or internal temperature of the thigh is 170 degrees.
- Allow to stand for 10 minutes before carving. Discard lemon wedges.
