|1 tbsp. Hy-Vee Select extra virgin olive oil|
|½ c. onion, chopped|
|(8-oz.) Hy-Vee Arborio rice|
|¼ c. dry white wine, optional|
|⅓ c. Hy-Vee finely shredded Parmesan cheese|

Heat olive oil in medium sauté pan. Sauté onion until translucent; add Arborio and cook, stirring constantly, for an additional 2 minutes.
Add white wine, if using, and stir for 1 minute. Stir in 1/2 cup stock and stir continuously until rice absorbs all the liquid. Continue adding stock and stirring until stock is gone or until rice has desired texture.
Stir in Parmesan and serve.
