1 yellow onion, chopped
1 green bell pepper, seeded and chopped
1 (4 oz) jar pimiento
¾ c. Hy-Vee white vinegar
⅔ c. Hy-Vee Select olive oil
⅔ c. Hy-Vee granulated sugar
1 (16 oz) package Hy-Vee rigatoni, uncooked
Hy-Vee salt and Hy-Vee black pepper, to taste

Directions

  1. Mix onion, green pepper, pimiento, vinegar, oil and sugar together in a large salad bowl.
  2. Cook rigatoni as directed on package. Drain.
  3. While rigatoni is still hot, add to other ingredients. Season with salt and pepper.
  4. Cover and refrigerate. Serve cold.
