Description

This little trick for shaved melon is just as impressive on mixed greens as it is on this summer-inspired bruschetta. For a more kid-friendly version, skip the spicy cream cheese and use regular.

1 wedge watermelon
1 wedge cantaloupe
1 wedge honeydew melon
½ c. spicy jalapeno cream cheese spread
24 (1/4-inch-thick) slices baguette bread, toasted
½ c. thinly sliced red onion

Directions

  1. To make melon ribbons, hold each melon wedge by the rind. Using a vegetable peeler, carefully shave fruit into ribbons. Discard rind. Set ribbons aside.
  2. Spread about 1 teaspoon cream cheese spread on each baguette slice. Top with melon ribbons and red onion.
