    ½ c. Hy-Vee granulated sugar
    ½ c. water
    ½ c. fresh raspberries
    ½ c. unfiltered apple cider vinegar
    2 sprig(s) fresh thyme, plus additional for garnish
    2 c. Hy-Vee club soda, divided

    • 4 (8-oz. each) cocktail glasses

    Directions

    1. Dissolve granulated sugar into water in a medium saucepan over low heat. Add raspberries, bring to a simmer and cook until raspberries break down. Stir in apple cider vinegar and fresh thyme; simmer 1 minute more. Remove from heat and strain into a large glass measuring cup; cool completely. Refrigerate until ready to serve. 

    2. When ready to serve, pour raspberry mixture into 4 (8-oz. each) cocktail glasses; top each with 1/2 cup club soda. Garnish with additional thyme sprigs, if desired.
