    1 c. butter, softened
    ½ c. granulated sugar
    2 egg yolks
    1 tbsp. Spice Islands pure vanilla extract
    2 ¼ c. all-purpose flour
    3 tbsp. Spice Islands poppy seed
    ⅛ tsp. salt
    ½ c. seedless raspberry jam

    Directions

    1. Using electric mixer, beat butter and granulated sugar until light; beat in egg yolks and vanilla.
    2. In medium bowl, combine flour, poppy seed and salt; gradually add to butter mixture, mixing until just blended.
    3. Shape dough into 1-inch balls. Place 1 inch apart on lightly greased baking sheets. Make a deep indentation in center of each ball.
    4. Bake at 350 degrees F for 15 to 18 minutes or until edges just begin to brown.
    5. Transfer from baking sheets to wire racks; cool completely. Spoon jam into centers of cookies; dust with powdered sugar, as desired.
