    1 ½ c. Hy-Vee complete pancake and waffle mix
    1 c. plus 2 tbsp. water
    Hy-Vee food colorings, pink, orange, yellow, green, blue, and purple
    1 ½ c. Hy-Vee frozen whipped topping, thawed
    ½ c. mascarpone cheese, softened
    1 tbsp. Hy-Vee powdered sugar
    Assorted fresh fruit, such as: blackberries, blueberries, honeydew, bananas, cantaloupe, and/or raspberries

    Directions

    1. Prepare pancake mix according to package directions. Divide batter among 6 bowls. Using Hy-Vee assorted food colors, tint the batter pink, orange, yellow, green, blue, and purple using one bowl of batter for each pancake; cook according to package directions. 

    2. Whisk together whipped topping, mascarpone cheese, and powdered sugar until smooth. Stack pancakes, topping with 1/3 cup mascarpone mixture and a coordinating color of fresh fruit.
