    You’ve seen green pesto, but how about purple? Red cabbage gives this dip its pretty purple color and has flavors of garlic, onion, and apple blended with Parmesan cheese.

    1 c. shredded red cabbage
    ¼ c. red onion, finely chopped, plus slivered for garnish
    ¼ c. Red Delicious apple, peeled and chopped
    2 clove(s) garlic, chopped
    2 tsp. Hy-Vee apple cider flavored distilled vinegar
    ¾ c. Hy-Vee grated Parmesan cheese
    Whole-grain bread, or crackers, for serving

    Directions

    1. Heat 2 teaspoons olive oil in a medium skillet over medium heat. Add red cabbage, red onion, apples, and garlic cloves. Cook and stir 5 minutes or until softened. Cool; transfer to a food processor. 

    2. Add 2 tablespoons olive oil and apple cider vinegar. Cover and process until combined. Add Parmesan cheese; cover and process until well-combined and nearly smooth.

    3. Transfer to a serving bowl. Garnish with slivered red onion, if desired. Serve immediately or cover and store in the refrigerator for up to 3 days. Serve with whole-grain bread or crackers.
