    1 qt.water
    2 c.pumpkin seeds
    1 tbsp.salt
    1 tbsp.canola oil
    1 ½ tbsp.brown sugar
    ½ tsp.cinnamon
    ¼ tsp.ground ginger
    tsp.grated nutmeg
    ½ c.combined dried cranberries and raisins

    Directions

    1. Bring water to a boil. Add salt and pumpkin seeds; boil for 10 minutes. Drain and pat seeds dry.
    2. Combine pumpkin seeds, oil, brown sugar, cinnamon, ginger and nutmeg.
    3. Line a baking sheet with parchment paper and evenly spread out seeds. Roast for 1 hours at 275 degrees.
    4. Place in bowl and toss in cranberries and raisins.
