    1 (5.1 oz) box Hy-Vee instant vanilla pudding mix
    3 c. Hy-Vee skim milk
    ¾ c. Pumpkin-Pecan Butter
    1 ½ c. Hy-Vee whipped topping, thawed, or whipped cream, divided
    Gingersnaps or vanilla wafers, for garnish

    Directions

    1. In a medium bowl prepare pudding mix according to package directions using milk. Cover and chill at least 5 minutes.
    2. In a small bowl, combine 3/4 cup prepared pudding and pumpkin butter.
    3. In each of six narrow dessert glasses, layer 3 tablespoons pudding, 1/4 cup pumpkin butter mixture, 3 tablespoons pudding and 1/4 cup whipped topping.
    4. Serve immediately or cover and chill up to 24 hours.
    5. Garnish each with a cookie before serving.
