Description

Pozole is Mexico's traditional soup or stew made of hominy, beans, pork, and chiles. We decided to add some "pollo" (chicken) for some extra protein.

2 ½ c. Hy-Vee 33%-less-sodium chicken broth
3 c. Hy-Vee rotisserie chicken, shredded
1 (15.5-oz.) can Hy-Vee golden hominy, drained and rinsed
¾ c. Roma tomatoes, seeded and chopped
¾ tsp. Hy-Vee ground cumin
Desired toppers, such as: sliced radishes, shredded cabbage, sliced avocado, fresh cilantro, and/or Hy-Vee tortilla strips

Directions

  1. Combine enchilada sauce and chicken broth in a large saucepan. Stir in chicken, hominy, tomatoes, and cumin. Bring to a gentle simmer. Simmer, covered, for 2 minutes or until heated through. Serve soup topped with desired garnishes.
