Cook potatoes in a large pot covered in lightly salted boiling water for 20 minutes or until tender; drain. Return potatoes to pot and let stand for 3 minutes.
Mashed potatoes have never tasted so good. Mash with sour cream and Cheddar cheese and top with crisp-cooked bacon. Yum.

|½ c. Hy-Vee unsalted butter|
|1 c. Hy-Vee heavy whipping cream|
|½ c. Hy-Vee sour cream|
|1 tsp. kosher salt|
|½ tsp. Hy-Vee ground black pepper|
|1 c. Rustic Red Cheddar cheese, shredded|
|½ c. Hy-Vee bacon, crisp-cooked and crumbled|
|¼ c. fresh chives, chopped|

Add butter, cream, sour cream, salt, and pepper to pot. Mash potatoes with potato masher. Stir in cheese, 1/2 cup bacon, and 1/4 cup chives.
Serve potatoes topped with additional bacon and chives.
